hericium

Hericium is a genus of edible mushrooms in the family Hericiaceae. Species in this genus are white and fleshy and grow on dead or dying wood; fruiting bodies resemble a mass of fragile icicle-like spines that are suspended from either a branched supporting framework or from a tough, unbranched cushion of tissue. This distinctive structure has earned Hericium species a variety of common names—monkey's head, lion's mane, and bear's head are examples. Taxonomically, this genus was previously placed within the order Aphyllophorales, but recent molecular studies now place it in the Russulales.

Bears head

The Bear’s Head mushroom, botanically classified as Hericium americanum, are one of North America’s only Hericium species and is a member of the Hericiaceae family. Also known as the Bear’s Head Tooth fungus and Pom Pom mushroom, Bear’s Head mushrooms grow on both living and dead deciduous hardwood trees such as birch and oak. When picked young and cooked are considered to be choice edibles! Bear’s Head mushrooms are tender and meaty with a mild, nutty taste and a sweet and fragrant seafood-like undertone, similar to lobster or crab.

Studies have proven that Bear’s Head mushroom produces Eninacines, which are strong stimulators of the nerve growth factor synthesis. (Kawagishi et al. 1991, 1994). These compounds stimulate neurons to regrow, which support the brain and neurotransmitters. Potentially significant in the treatment of senility, Alzheimer’s disease, repairing neurological trauma from strokes, improving muscle/motor response pathways and cognitive function.

Hericium erinaceus, also known as Lion's Mane Mushroom or Hedgehog Mushroom, is an edible fungus, which has a long history of usage in traditional Chinese medicine. This mushroom is rich in some physiologically important components, especially β-glucan polysaccharides, which are responsible for anti-cancer, immuno-modulating, hypolipidemic, antioxidant, and neuroprotective activities of this mushroom. Lion’s mane (Hericium Erinaceus) mushrooms are found in temperate climate regions around the world, including North America. Lion's Mane has a taste and texture similar to lobster or crab; stringy, meaty, and delicate. Once cooked, it's slightly chewy, tender, and resembles that of crab meat making a great seafood alternative!
